Spiced Quinoa and Oat Porridge made by Nicole

As we start to wrap ourselves up in winter, these cold mornings are perfect for porridge. Grounding and warming, any grain can be used. Their nature draws energy inward for deep nourishment. Ghee is also a warming aid to strengthen our digestion. Goji’s and Mulberries are great for the Kidneys, the organ associated with Winter.
1 Tbsp Ghee or coconut oil
½ Cup Quinoa Flakes (buckwheat, brown rice flakes)
½ Cup Oats
Goji Berries
Dried Mulberries
Plant/Dairy milk of choice
To Serve
Plant/Dairy yoghurt
Poached seasonal fruit
Toasted hazelnuts
Maple syrup
Melt Ghee in a saucepan over medium heat. Add quinoa, oats and cinnamon, lightly toasting for about a minute until golden. This brings out their flavor and makes them easier to digest.
When golden, add a few goji berries and mulberries then cover with milk of choice. Stir to combine and cook on a low heat until the grains are smooth and creamy.

Serve in your favourite bowl topped with warmed seasonal fruit (spiced pears and quince are my fav!), yoghurt and toasted crushed hazelnuts.
